These raw choco bites might look and taste decadent, but they're mainly made of banana, carrot, and oats. You can make them for dessert or use them as a raw power snack, as they're sweetened with energizing figs, dates, and raw cacao.

- 1 carrot
- 1 banana
- ½ cup gluten-free rolled oats
- 3 dried figs
- 3 dates
- 2 tsp. raw cacao powder
- Shredded coconut (optional)
Instructions
- Chop carrot in large pieces. In a food processor, blend carrots, figs, and dates for 10-15 seconds or until minced. Set aside.
- In a large bowl, add banana and oats and mash with a fork or bare hands. Add carrot mix and raw cacao. Blend together until mixture is uniform. Shape into 1-inch round bites and set aside.
- Pour some shredded coconut (if using) on a small bowl, and roll each bite until coconut covers the surface. Store in an airtight container in the refrigerator for up to 3 days.
Per serving (1 ball): 43 calories, 9.5 g carbohydrates, 1 g protein, 0.4 g total fat, 0.1 g saturated fat, 0 g cholesterol, 5 mg sodium, 4.3 g fiber, 4.2 g sugar

(4 from 6 votes)Can you sub dates/dried fig for just some sugar to sweeten it or do they provide bulk/consistency too? I ask as I am on a low FODMAP at present, some of my no no's are dried fruits as Fructose is tricky one for me
Hi Victoria, The dates and figs add bulk, they're also sticky and help hold the bites together. You could try adding a combination of peanut butter and sugar and see how that goes. If you decide to try a low FODMAP version, let us know how your experimenting goes! Good luck!

What is raw cacao? Cacao powder or nibs?
These are pretty good. The consistency is not for everyone though, I would love if I could get them to harden up a little. My pop in the freezer for 15mins and see how I fair. Loved taste though and easy and fun to make
Easy to make and healthy, but texture is like goo and tastes unappealing. I even tried baking them and it still tasted like too much banana and was gooky inside.
Should I be blending in a blender all the ingredient or in a bowl with a fork?
Could I use 3 additional dates instead of the figs?
Wow, I think this might be the worst recipe I've ever made! It doesn't just taste awful, but it sits terribly in your stomach afterwards too!
You must have done something wrong... these are some of the best truffles I've ever made. There is nothing odd in the 5 ingredients, unless you used the actual cacao bean? The recipe calls for cacao powder.
How long can you store these - in the fridge I assume?

I just saw the reviews and M. Reis needs to look at the ingredients. All it calls for is raw cacao. The word "powder" is nowhere to be seen. People who have never used a lot of the ingredients that Forks Over Knives recipes call for have to constantly look them up on Google and in a lot of cases, they have to find substitutes because the stores in their areas don't handle the exact called for ingredients. I do wish the recipes from FOK would simplify their ingredients to common names and uses. Not everyone can (or wants to) live in California or New York, but thousands live in the other states and they, too, want to eat healthy. Isn't that what FOK at least started out to accomplish? Healthy food for everyone?
